Recipe of the Month

GREEN OR RED TOFU SPINACH PATTIES 

300 gm spinach leaves (or 200 gram coarsely grated sweet potato)

1 tablespoon of oil

150 gm. coarsely grated tofu

1 small onion coarsely grated

2 scrambled eggs

1/4 cup of bread crumbs (or oatmeal)

salt and pepper

 

Heat a pan on a low flame add the oil and spinach steam for 4 minutes while stirring so that the spinach softens and loses volume.Turn the flame off, strain and cool the mixture.

 

Put the mixture in a food blender with a metal blade add the tofu and onion and grind with pulses until the mixture becomes homogeneous. Put in a bowl. Add the eggs and bread crumbs, spices, and form flat oval patties. Pan fry or oven bake.
